The UI is sleek and responsive and just overall works very well.It's more or less the same as GWT Material from what I can tell (they are both designed around Google's Material spec). GWT Polymer is really just a wrapper, though, for their javascript library, so it requires jsInterop.
Well, the real difference is that GWT Polymer uses Web Components, whereas GWT Material uses "plain old HTML" elements (and as a result should probably work on more browsers than GWT Polymer; though now that Microsoft killed all old IEs it might not be a problem anymore)
