Re: compile to java 5 target bytecode, server side GWT(?)

It's not possible because compiling with target doesn't ensure that will work. For example, if the class A is new in Java 7 and it's used in the class B in GWT 2.7, B will not work on JRE 5 and 6. You may try to use backporting tools if you want to run on old JRE.
